Pumpkin Bars

I’m heading to my sister’s for the weekend and I had some pumpkin puree in my fridge that I needed to use before I left home. The result: pumpkin pancake dinner, pumpkin spice biscotti for breakfast and… (I needed a recipe for the leftover)… Super fast pumpkin bars for the road trip!

What else do we need?


Pumpkin Bars: 12 bars 3cm x 4cm

Recipe from Detoxinista

  • 120g pumpkin puree
  • 120g raw almond butter

  • 100g honey
  • 2 medium eggs
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves (I didn’t have, so I didn’t add it)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • Walnuts for garnishing (optional)
  • Maple syrup for serving (optional)
  • Preheat oven at 170ºC.
  • Line a baking pan with parchment paper and grease it with butter or vegetable oil (mine was 12cm x 12cm).
  • Mix all ingredients in a bowl until you get an even batter.
  • Pour the batter on the baking pan.
  • Bake for 20-25 minutes or until the cake tester comes out clean.
  • Let cool.
  • Cut the bars.
